Every flavour is churned each morning in small batches
Milk and cream arrive every morning from farms an hour from Riyadh.
We warm the milk with sugar and real vanilla, saffron or cardamom, depending on the flavour.
12 minutes in the churner, with less air so it stays dense and smooth.
Pistachio, luqaimat and brownie pieces are folded in by hand so they stay crunchy.
It reaches the shops before opening, and nothing left at night goes back in the case.

I tried the camel milk vanilla out of curiosity and now it's my regular. Strangely smooth and light.
I ordered the celebration cake for my sister's graduation. They sent me the design first, and it arrived exactly as asked.
